Guanciale

Guanciale is a cured meat made from the marbled pork cheek (also known as the ‘jowl’). Each piece is hand-rubbed with salt, spices and pepper before being air dried for 60-90 days to create a deep, fatty and salty flavour. Guanciale is often chosen by chefs as the foundation to many pasta dishes, such as amatriciana or carbonara.
