Our chilli Capocollo Loin (also known as chilli ‘lonza’) is made solely from lean pork loin. Hand-prepared in a similar process to prosciutto, but with added chilli and less maturing time due to its smaller size (90-100 days), this lean cut adds sweetness and heat to a pizza or antipasto platter.
