Cotechino is a large sausage originating from the Emilia Romagna region of Italy. It is hand-crafted by filling a large natural casing with lean pork meat, rind and jowls, salt, finely cracked black pepper and nutmeg. It requires slow cooking and is traditionally served sliced up on a bed of lentils.
